A follow up to the Bread.

A couple of thoughts on the bread project.

Pay attention to the directions on the yeast packets….I put a hot pad between my steel bowl and the top of oven. Direct heat would probably kill the yeast.

There was also 1/2 a cup of olive oil in the bread.

The  amount of flour is six cups and there was also about a tablespoon of salt.

A word about not measuring. I enjoy having skills in the kitchen but they come at quite a price……….twenty years in low paying and high stress cook / management jobs.   Ive made white bread from scratch hundreds of times. Unless you have similar experiences, I would measure.   Having said that, the yeast mixture will only absorb a certain amount of flour. As you knead (about 20 minutes)  it will also pick up more of the table flour.
